Today one of the most promising directions of research in the field of modeling and analyzing phenomena and processes is fuzzy – technologies or fuzzy logic. The aim of this project is solving the practical problem of determining quality of bread by the rules of fuzzy logic. As not all the indicators of bread quality can be quantified, for example: taste, smell, color, etc., then the fuzzy logic helps us to determine the correspondence between the quality of bread and State standard requirements. Development of the expert system to determine the quality of bread with nanostructured additives of different cereals by the rules of fuzzy logic. Thus, we have drafted an application with the elements of the expert system according to the rules of fuzzy logic. It provides the opportunity to identify not only the bread quality, but also other products. The software application has been tested to determine the quality of bread with different additives and the results of the investigation are agreed with the opinion of experts. The results of this project can be used in bakery for determining the quality of bread with different additives, and as analytical support for the staff of the bakery.
