A senior (400-level) undergraduate course was developed and taught by Hospitality Management, Biology, and Chemistry faculty. Scheduled as an intensive three-week course, students were introduced to beer brewing and brewing facilities through lectures on the brewing process, chemistry and biochemistry, beer history and styles, responsible alcohol management, and state and federal regulations. Students also visited regional brewing facilities and were tasked with designing a fictional brewpub as a class project.
