Student interest in fermentation and fermented beverages make courses that focus on the science associated with fermentation a ripe area for engaging students who might not otherwise consider taking chemistry courses. I have taught a course on the chemistry of brewing at Linfield College since 2010 to upper division non-majors both on campus and during a January Term in Europe. This presentation will describe the course, hands on brewing experiences, field trips, tasting panels, and in-class activities I have developed based on process-oriented guided inquiry learning (POGIL) that introduce students to a variety of scientific topics associated with brewing.
