Understanding and applying the scientific method is a learning outcome for all general education science courses at Marian University. To give students ownership of the scientific method and for learning on their own, the students in the fall 2013 Cooking with Chemistry were asked to perform experiments of their own design at home and then present their processes in class. This assignment assessed their scientific understanding, creative and critical thinking, and effective communication. By having students perform multiple at-home experiments during the term, all involved could readily observe their growth in these learning outcomes and their increased comfort in exploring science.

As an honors course for fall 2010, the authors offered a team-taught interdisciplinary chemistry and psychology course that included a lab. We used Candace Pert’s Molecules of Emotion as the central text and supplemented it with research articles from the two disciplines. With this approach, we helped develop students’ critical thinking, effective communication, science literacy, and knowledge of the disciplines.
